Colcannon Recipe

This recipe feeds 6 people

Ingredients

1 x

1 bunch of curly kale

8 x

8 Potatoes

1 x

1 big onion

1 x

1 tablespoon of butter

1 x

1 cup of milk

1 x

1 pinch of salt

Method

Wash and chop the curly kale

Chop the onions

Peel and chop potatoes

Boil curly kale for 20 minutes

Place the spuds in a large burner (pot). Bring to the boil and cook for 30 minutes

Drain the spuds

Cook the chopped onions in a cup of milk until they are soft

Add the cooked onion and the milk to the spuds, add the curly kale mix together add a spoon of butter and a pinch of salt and pepper to taste
