Currant Bread Recipe
This recipe makes 1 cake
Ingredients
5 handfulls of Self-raising flour
1 handful of currants or raisins soaked in boiling water
2 cups of Butermilk
1 teaspoon sugar
1/2 cup of water
1/4 cup of self-raising flour
Method

Preheat the oven to:
Gas Mark 6, 200°C (400°F)

Mix the flour & sugar in a bowl

Strain the fruit and add it to the flour

Add the buttermilk and water

The mixture should resemble cooked stir about (porridge)

Little by little add about 1/4 a mug of flour, this will dry out the mixture, gently fold and slap the flour into the mixture

Place mixture in a greased cake tin

Bake for 60 – 90 minutes 200°C (400°F)

The cake should sound hollow when tapped underneath

Cover with a damp tea towel or dish cloth, this will keep the bread nice and soft
